Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll the pizza dough into a large rectangle about 10×14 inches.
Spread the pepperoni evenly over the dough, then add capicola (or ham) and sprinkle the shredded mozzarella on top.
Sprinkle the pizza seasoning over the cheese and fillings.
Starting from a long side, tightly roll the dough into a log, pinch the edges to seal, and tuck the ends inward.
Transfer the filled dough seam-side down to the prepared baking sheet.
In a small bowl, beat the egg with water and brush this egg wash over the top of the stromboli.
Bake in the preheated oven for about 25–30 minutes until the crust is golden brown and the cheese is melted.
Let cool for a few minutes, then slice into portions and serve warm with marinara sauce if desired.
