Ingredients
  

  • Almond flour – 1 ½ cups 150 g, for the crust
  • Cocoa powder – 3 tablespoons 20 g, for chocolate flavor
  • Keto sweetener powdered – ¼ cup (50 g), for sweetness
  • Butter – ¼ cup 60 g, melted to bind crust
  • Vanilla extract – 1 teaspoon enhances flavor
  • Salt – a pinch
Cheesecake Layer
  • Cream cheese – 8 oz 225 g, softened
  • Keto sweetener – ⅓ cup 65 g
  • Heavy cream – ½ cup 120 ml, for smooth texture
  • Vanilla extract – 1 teaspoon
Chocolate Layer
  • Heavy cream – 2 cups 480 ml
  • Cocoa powder – ¼ cup 20 g
  • Keto sweetener – ⅓ cup 65 g
  • Gelatin powder – 1 ½ teaspoons for setting
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch
Whipped Cream Topping
  • Heavy cream – 1 cup 240 ml, chilled
  • Keto sweetener – 3 tablespoons 30 g
  • Vanilla extract – 1 teaspoon

Method
 

  1. Preheat oven to 320°F (160°C) and line a baking dish with parchment paper
  2. Mix almond flour, cocoa powder, sweetener, and salt in a bowl
  3. Add melted butter and vanilla, mix until crumbly
  4. Press mixture evenly into baking dish and bake for 15 minutes
  5. Remove and let crust cool completely
  6. In a bowl, beat cream cheese and sweetener until smooth
  7. Add heavy cream and vanilla, mix until creamy
  8. Spread evenly over cooled crust and refrigerate
  9. In a saucepan, combine heavy cream, cocoa powder, and sweetener
  10. Heat gently while stirring until smooth
  11. Add gelatin mixture and vanilla, mix well
  12. Let cool slightly, then spread over cheesecake layer
  13. Refrigerate until set
  14. Whip heavy cream with sweetener and vanilla until stiff peaks form
  15. Spread over chocolate layer evenly
  16. Optional: top with chocolate shavings
  17. Chill for at least 1–2 hours until fully set
  18. Slice into squares and serve
