Ingredients
  

  • 1 cup 200 g granulated sugar
  • ½ cup 115 g unsalted butter, melted
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • cup 35 g unsweetened cocoa powder
  • ½ cup 65 g all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 cup 100 g shredded sweetened coconut
  • ½ cup 120 ml sweetened condensed milk
  • ¼ cup 55 g brown sugar
  • 1 tbsp milk

Method
 

  1. preheat oven to 350 °F (175 °C) and line an 8×8 inch baking pan with parchment
  2. whisk melted butter and granulated sugar until glossy and combined
  3. add eggs one at a time, then stir in vanilla until smooth
  4. sift in cocoa powder, flour, salt, and baking powder and fold gently into batter
  5. pour batter into prepared pan and spread evenly with a spatula
  6. bake until a toothpick inserted comes out with a few moist crumbs
  7. while brownies cool, combine shredded coconut, sweetened condensed milk, brown sugar, and milk in a bowl
  8. mix until coconut is fully coated and forms a sticky, spreadable frosting
  9. once brownies reach room temperature, spread coconut frosting evenly on top
  10. press extra coconut lightly into frosting for a snow-topped look
  11. let set before slicing into squares and serving
