Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 pound dried green split peas rinsed
  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, and cook until softened.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add split peas, vegetable broth, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer gently, stirring occasionally, until peas are tender and soup thickens.
  7. Remove bay leaves, taste, and adjust seasoning as needed.
  8. Serve hot.
