Ingredients
  

  • 6 –8 fresh pork dumplings about 240 g
  • 4 cups 960 ml chicken or vegetable broth
  • 1 pack 85 g instant ramen noodles (discard seasoning)
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp chili paste optional
  • 1 cup baby spinach or bok choy
  • 2 soft-boiled eggs
  • 2 scallions thinly sliced
  • toasted sesame seeds for garnish

Method
 

  1. heat sesame oil in a medium pot until shimmering and add garlic and grated ginger until fragrant
  2. pour in chicken broth and bring to a gentle simmer
  3. stir in soy sauce, rice vinegar, and optional chili paste for spice
  4. carefully add pork dumplings to simmering broth and cook until heated through and tender
  5. drop ramen noodles into broth and cook until chewy but not mushy
  6. nestle in greens like spinach or bok choy and let wilt slightly
  7. ladle hot ramen and dumplings into bowls, dividing evenly
  8. top each bowl with soft-boiled eggs cut in half
  9. sprinkle sliced scallions and toasted sesame seeds over surface
  10. serve piping hot with extra soy or chili paste on the side
