Ingredients
  

  • 2 medium zucchini sliced into rounds
  • 2 cups mushrooms sliced (button or cremini)
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon fresh parsley chopped
Optional additions
  • Red pepper flakes for heat
  • Grated parmesan cheese
  • Lemon juice for brightness

Method
 

  1. Heat olive oil or butter in a large skillet over medium heat
  2. Add sliced onions and sauté until slightly softened
  3. Stir in the garlic and cook briefly until fragrant
  4. Add mushrooms and cook until they release their moisture and start to brown
  5. Add sliced zucchini to the skillet
  6. Season with salt, pepper, and thyme or Italian seasoning
  7. Cook while stirring occasionally until zucchini becomes tender but not mushy
  8. Allow vegetables to lightly caramelize for extra flavor
  9. Remove from heat and sprinkle with fresh parsley
  10. Serve immediately while warm
