Ingredients
  

  • 2 dragon fruits peeled and cubed
  • Juice of 2 limes
  • 3/4 cup light coconut milk
  • 2 tablespoons sugar adjust to taste
  • 1 1/2 cups ice

Method
 

  1. Scoop the dragon fruit flesh from the skins and place it in a blender.
  2. Add the lime juice, light coconut milk, sugar, and ice to the blender.
  3. Blend on high until the mixture is completely smooth and creamy.
  4. Taste and adjust sweetness if needed.
  5. Pour the sorbet mixture into a freezer-safe container.
  6. Freeze for at least 2–3 hours until firm.
  7. Let the sorbet soften slightly at room temperature for a few minutes before serving.
