Ingredients
  

  • 1.5 lbs boneless skinless chicken breast sliced into thin strips
  • 3 medium bell peppers red, yellow, green, sliced
  • 1 large red onion thinly sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 8 small flour or corn tortillas
  • ¼ cup fresh cilantro chopped

Method
 

  1. Preheat the oven to 400°F (200°C) to ensure even roasting
  2. Slice the chicken into thin strips for faster cooking and tenderness
  3. Cut bell peppers and onions into even strips for uniform roasting
  4. Add chicken and vegetables to a large mixing bowl
  5. Drizzle olive oil over everything to help seasoning stick
  6. Add all spices, minced garlic, and lime juice
  7. Toss thoroughly until chicken and vegetables are evenly coated
  8. Spread mixture onto a large sheet pan in a single layer
  9. Bake for 30–35 minutes, stirring halfway through for even cooking
  10. Remove from oven once chicken is fully cooked and veggies are slightly charred
  11. Garnish with fresh cilantro before serving
