Ingredients
  

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • ½ cup cucumber diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup chickpeas rinsed and drained
  • 2 tbsp feta cheese crumbled
  • 1 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • ½ tsp dried oregano
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to a moderate baking temperature
  2. Wash and dry sweet potatoes
  3. Rub lightly with olive oil
  4. Place on baking tray
  5. Bake until potatoes are fork-tender
  6. Remove from oven and cool slightly
  7. Slice open carefully
  8. In a bowl, combine cucumber, tomatoes, onion, chickpeas
  9. Add lemon juice, parsley, oregano, salt, and pepper
  10. Stir gently to combine
  11. Spoon filling into warm sweet potatoes
  12. Sprinkle feta cheese on top
  13. Serve immediately
