Preheat the oven to 375°F and line a baking sheet with parchment paper.
In a skillet, sauté minced garlic and chopped spinach until wilted and most moisture evaporates.
In a bowl, mix sautéed spinach with feta, ricotta (if using), Parmesan, oregano, pepper, and salt until well combined.
Roll out the thawed puff pastry on a lightly floured surface and cut into 3–4 inch squares.
Place a spoonful of the spinach-feta filling in the center of each square.
Fold the pastry over the filling (triangle or parcel), and press edges to seal.
Brush tops with olive oil or melted butter and sprinkle seeds if desired.
Bake until golden brown and crisp, about 20–25 minutes.
