Ingredients
  

  • 4 boneless pork chops about 1 inch thick
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon butter optional, for richer sauce

Method
 

  1. Pat pork chops dry with paper towels
  2. Season both sides with salt, pepper, oregano, thyme, and paprika
  3. Heat olive oil in a large skillet over medium-high heat
  4. Add pork chops and sear until golden brown on one side
  5. Flip and cook until the internal temperature reaches safe doneness
  6. Remove pork chops and set aside
  7. Lower heat and add garlic to the skillet
  8. Stir briefly until fragrant
  9. Add lemon juice and lemon zest, scraping up browned bits
  10. Stir in butter if using to create a glossy sauce
  11. Return pork chops to the skillet and spoon sauce over them
  12. Sprinkle with chopped parsley and optional red pepper flakes
  13. Serve warm with extra lemon wedges
