In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper
Add chicken cubes and toss to coat evenly
Cover and refrigerate to marinate for at least 30 minutes or up to 4 hours
If using wooden skewers, soak them in water for 20 minutes
Thread marinated chicken and vegetables alternately onto skewers
Preheat grill or grill pan to medium-high heat
Lightly oil the grill grates
Grill kabobs, turning occasionally, until chicken is cooked through and lightly charred
Remove from grill and sprinkle with fresh parsley
Let rest briefly before serving
