Ingredients
  

For the Chicken and Marinade
  • 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
For the Kabobs
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 small red onion cut into wedges
  • Wooden or metal skewers

Method
 

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper
  2. Add chicken cubes and toss to coat evenly
  3. Cover and refrigerate to marinate for at least 30 minutes or up to 4 hours
  4. If using wooden skewers, soak them in water for 20 minutes
  5. Thread marinated chicken and vegetables alternately onto skewers
  6. Preheat grill or grill pan to medium-high heat
  7. Lightly oil the grill grates
  8. Grill kabobs, turning occasionally, until chicken is cooked through and lightly charred
  9. Remove from grill and sprinkle with fresh parsley
  10. Let rest briefly before serving
