Ingredients
  

  • 1 ripe mango peeled and roughly chopped
  • 2 tablespoons lime juice fresh
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or maple syrup optional, to taste
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper to taste

Method
 

  1. Place the chopped mango into a blender or food processor.
  2. Add the fresh lime juice, apple cider vinegar, olive oil, optional honey, salt, and pepper.
  3. Blend on high until the mixture is smooth and creamy.
  4. Taste and adjust the seasoning, adding more salt or lime juice if needed.
  5. If the dressing is too thick, add a tablespoon of water and blend again to reach the desired consistency.
  6. Pour the vinaigrette into an airtight jar or bottle.
  7. Refrigerate until ready to use.
