Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper to prevent sticking
  2. Add cottage cheese to a blender or food processor and blend until completely smooth and creamy
  3. Transfer the blended cottage cheese to a mixing bowl and stir in honey or maple syrup
  4. Add lemon zest, lemon juice, vanilla extract, and salt, mixing until evenly combined
  5. Gently fold in almond flour until a thick, scoopable batter forms
  6. Carefully fold in blueberries, ensuring they are evenly distributed without crushing them
  7. Scoop small portions of batter and roll gently into bite-sized balls using clean hands or a spoon
  8. Place bites on the prepared baking tray with slight spacing between each
  9. Bake until lightly golden and set, with a soft but firm texture
  10. Remove from oven and allow to cool completely before serving or storing
