Ingredients
  

  • cups shredded zucchini about 1 medium zucchini, moisture removed
  • 1 cup shredded mozzarella cheese
  • cup grated parmesan cheese
  • 2 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons almond flour optional for extra binding

Method
 

  1. Preheat oven to 350°F (175°C) or prepare air fryer
  2. Grate zucchini using a box grater
  3. Place shredded zucchini in a towel and squeeze out as much liquid as possible
  4. Transfer zucchini to a mixing bowl
  5. Add mozzarella, parmesan, eggs, and seasonings
  6. Mix thoroughly until well combined
  7. Add almond flour if mixture feels too wet
  8. Grease a muffin tin or line a baking tray
  9. Scoop small portions and shape into round or oval tots
  10. Place evenly in muffin tin or on tray
  11. Bake for 20–25 minutes until golden brown on top
  12. For air fryer, cook at 375°F for 10–12 minutes until crispy
  13. Let cool slightly before removing and serving
