Method
- Heat olive oil in a large pot or Dutch oven over medium heat
- Add diced onion and cook until translucent
- Stir in minced garlic and cook until fragrant
- Pour in chicken broth and bring to a gentle simmer
- Add shredded chicken and diced green chiles
- Sprinkle in cumin, oregano, chili powder, salt and pepper
- Stir to combine and simmer for 15 min to meld flavors
- Lower heat and add heavy cream, stirring gently
- Add cream cheese cubes and continue stirring until fully melted
- Simmer until chili thickens and creamy
- Taste and adjust seasoning as needed
- Serve hot with your favorite toppings
