Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 3 –4 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1 lb 450 g cooked, shredded chicken (breasts or thighs)
  • 1 4.5 oz / 127 g can diced green chiles, drained
  • ½ cup heavy cream
  • 4 oz 115 g cream cheese, softened and cubed
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional toppings: avocado slices cilantro, sour cream, shredded cheese

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat
  2. Add diced onion and cook until translucent
  3. Stir in minced garlic and cook until fragrant
  4. Pour in chicken broth and bring to a gentle simmer
  5. Add shredded chicken and diced green chiles
  6. Sprinkle in cumin, oregano, chili powder, salt and pepper
  7. Stir to combine and simmer for 15 min to meld flavors
  8. Lower heat and add heavy cream, stirring gently
  9. Add cream cheese cubes and continue stirring until fully melted
  10. Simmer until chili thickens and creamy
  11. Taste and adjust seasoning as needed
  12. Serve hot with your favorite toppings
