Ingredients
  

For the Cake
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup powdered erythritol or monk fruit sweetener
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup melted butter
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
For the Vanilla Glaze
  • 3 tablespoons cream cheese
  • 2 tablespoons powdered keto sweetener
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
Optional toppings
  • Fresh berries
  • Chopped almonds
  • Sugar-free chocolate drizzle

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Grease a loaf pan or bundt pan
Prepare the batter:
  1. In a large bowl combine almond flour, coconut flour, baking powder, sweetener, and salt
  2. In another bowl whisk eggs, melted butter, almond milk, and vanilla extract
  3. Pour wet ingredients into dry ingredients and mix until smooth
Bake the cake:
  1. Pour the batter into the prepared pan
  2. Smooth the top evenly
  3. Bake until the cake becomes golden and a toothpick inserted comes out clean
  4. Allow the cake to cool completely before removing from the pan.
Prepare the glaze:
  1. Mix cream cheese, keto sweetener, heavy cream, and vanilla until smooth
  2. Drizzle glaze over the cooled pound cake
  3. Slice and serve.
