Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Divide shredded mozzarella into small circles on the baking sheet, spacing them apart.
Bake the cheese for about 5–7 minutes until melted and lightly golden around the edges.
While the cheese bakes, heat olive oil or bacon grease in a skillet over medium heat.
Add garlic and sauté briefly until fragrant.
Stir in the spinach and cook until wilted.
Remove from heat and allow the spinach mixture to cool slightly.
In a mixing bowl, combine cream cheese, cooked bacon, sautéed spinach, salt, and pepper.
Mix until the filling becomes smooth and well combined.
Remove the baked cheese circles from the oven and let them cool for about one minute.
Spoon a portion of the filling onto the center of each cheese wrap.
Carefully roll the cheese around the filling while it is still flexible.
Place the roll-ups seam-side down and allow them to cool slightly to set.
Serve warm or at room temperature.
