Method
- Lay Swiss cheese slices flat on a clean surface
- Place corned beef evenly over cheese
- Add small portions of drained sauerkraut
- Spread mustard or dressing if desired
- Roll tightly into compact cylinders
- Heat butter or oil in a skillet over medium heat
- Place roll-ups seam-side down in pan
- Cook until cheese begins to crisp
- Turn gently to brown evenly
- Continue cooking until golden and firm
- Remove from pan and cool briefly
- Serve warm for best texture
