Ingredients
  

  • 8 slices mozzarella or provolone cheese
  • 16 slices pepperoni
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup low-carb pizza sauce for dipping
Optional additions
  • Cooked sausage crumbles
  • Sliced olives
  • Red pepper flakes
  • Fresh basil leaves

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Line a baking sheet with parchment paper
Prepare the cheese base:
  1. Place cheese slices flat on the baking sheet
  2. Bake for about 4–5 minutes until the cheese melts and slightly bubbles
Add the filling:
  1. Remove cheese from the oven
  2. Place two pepperoni slices on each melted cheese piece
  3. Sprinkle Italian seasoning and garlic powder on top
Roll the pizza bites:
  1. Carefully roll each melted cheese piece into a tight roll
  2. Allow them to cool slightly so they hold their shape
  3. Serve with warm low-carb pizza sauce for dipping.
