Pour in beef broth and stir to deglaze the pan
Add cream cheese and stir until melted into a creamy sauce
Return vegetables to the skillet and mix well
Sprinkle shredded cheese evenly over the top
Cover and cook on low until cheese is melted and bubbly
Garnish with parsley and serve hot
