Ingredients
  

  • 1 cup shredded mozzarella cheese
  • ½ cup almond flour
  • 1 large egg
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • 12 –15 pepperoni slices
  • 2 tbsp pizza sauce sugar-free
  • Optional: Italian seasoning or chili flakes

Method
 

  1. Preheat oven to a moderate baking temperature
  2. Line a baking tray with parchment paper
  3. Add mozzarella to a microwave-safe bowl
  4. Heat until cheese softens and becomes pliable
  5. Stir in almond flour, egg, garlic powder, and salt
  6. Mix until a dough-like texture forms
  7. Scoop small portions of dough onto tray
  8. Flatten slightly into round shapes
  9. Add a small spoon of pizza sauce
  10. Top each bite with pepperoni slices
  11. Sprinkle optional seasoning if desired
  12. Bake until golden and lightly crisp
  13. Remove and cool briefly before serving
