Ingredients
  

  • 1 ½ cups 150 g unsweetened shredded coconut
  • ½ cup 60 g almond flour
  • ¼ cup 25 g coconut flour
  • ½ teaspoon 2.5 mL baking powder
  • ¼ teaspoon 1.25 mL salt
  • ½ cup 120 mL unsweetened peanut butter
  • ¼ cup 60 mL melted coconut oil
  • ¼ cup 60 mL powdered erythritol
  • 2 tablespoons 30 mL sugar-free sweetener of choice
  • 1 teaspoon 5 mL vanilla extract
  • ½ cup 90 g sugar-free chocolate chips

Method
 

  1. In a large bowl, combine shredded coconut, almond flour, coconut flour, baking powder, and salt until evenly mixed
  2. Add unsweetened peanut butter, melted coconut oil, powdered erythritol, sweetener, and vanilla extract to the dry ingredients
  3. Mix thoroughly until a dough forms and ingredients are fully incorporated
  4. Press the dough into a lined baking pan to form an even layer
  5. Melt sugar-free chocolate chips in a double boiler or microwave until smooth
  6. Pour the melted chocolate over the pressed dough and spread evenly with a spatula
  7. Place the pan in the refrigerator or freezer until the bars are fully set and firm
  8. Once set, cut into individual bars of desired size
  9. Store bars in an airtight container until ready to enjoy
