Ingredients
  

  • 1 cup 240 mL heavy whipping cream, cold
  • 4 oz 115 g cream cheese, softened
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 2 –3 tablespoons powdered keto sweetener adjust to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Chill mixing bowl and whisk attachment in the freezer for about 10 minutes
  2. Pour cold heavy whipping cream into chilled bowl and begin whipping on medium speed
  3. Once cream starts to thicken slightly, add keto sweetener and continue whipping
  4. Whip until soft peaks form and set aside
  5. In separate bowl, beat softened cream cheese until smooth and creamy
  6. Add fresh lime juice, lime zest, vanilla extract, and a pinch of salt into the cream cheese
  7. Mix until fully incorporated and smooth
  8. Gently fold whipped cream into cream cheese mixture in batches
  9. Continue folding until completely combined and airy
  10. Taste and adjust sweetener or lime to preference
  11. Spoon mousse into individual serving cups or ramekins
  12. Refrigerate for at least 30 minutes to allow mousse to set
  13. Serve chilled for best flavor and texture
