Ingredients
  

  • 1 1/2 cups almond flour
  • 1/4 cup powdered keto-friendly sweetener
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter melted
  • 2 oz cream cheese softened
  • 2 large eggs
  • 1/3 cup powdered keto sweetener for filling
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder

Method
 

  1. Preheat oven to moderate baking temperature
  2. Line a square baking pan with parchment paper
  3. Combine almond flour, sweetener, and salt in a bowl
  4. Stir melted butter into dry ingredients until crumbly dough forms
  5. Press crust mixture evenly into prepared pan
  6. Bake until lightly golden and set
  7. In separate bowl, beat cream cheese until smooth
  8. Add eggs, sweetener, lemon juice, zest, vanilla, and baking powder
  9. Mix until completely creamy and lump-free
  10. Pour lemon filling over pre-baked crust
  11. Return pan to oven and bake until center is just set
  12. Remove and allow bars to cool completely
  13. Chill briefly for cleaner slicing
  14. Cut into squares and serve
