Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 1 cup fresh mozzarella sliced
  • 1 medium tomato thinly sliced
  • 2 tbsp basil pesto or olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • Fresh basil leaves for garnish

Method
 

  1. Preheat oven to a moderate baking temperature
  2. Pat chicken breasts dry with paper towels
  3. Place chicken on a cutting board
  4. Slice thin cuts across each breast without cutting through
  5. Brush chicken with olive oil or pesto
  6. Season evenly with salt, pepper, and garlic powder
  7. Gently tuck mozzarella slices into the cuts
  8. Insert tomato slices between cheese layers
  9. Transfer chicken to a baking dish
  10. Bake until chicken is fully cooked and tender
  11. Remove from oven and rest briefly
  12. Garnish with fresh basil before serving
