Ingredients
  

  • 2 lbs 900 g boneless, skinless chicken breasts or thighs
  • 8 oz 225 g fresh mushrooms, sliced
  • 4 cloves garlic minced
  • 1 tbsp butter
  • 8 oz 225 g cream cheese, cubed
  • 1 cup 240 mL heavy cream
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp Italian seasoning
  • 1 cup 100 g shredded mozzarella cheese
  • Optional: fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C)
  2. In a large skillet, melt butter over medium heat
  3. Add sliced mushrooms and sauté until tender and lightly browned
  4. Stir in minced garlic and cook until fragrant
  5. Add chicken pieces to the skillet and brown each side lightly
  6. Sprinkle salt, pepper, and Italian seasoning over the chicken
  7. Stir cream cheese and heavy cream into the skillet until smooth
  8. Allow mixture to become creamy and well-blended
  9. Transfer chicken and mushroom mixture to a greased casserole dish
  10. Spread evenly and pour remaining sauce over top
  11. Sprinkle shredded mozzarella cheese across the casserole
  12. Bake for 25–30 minutes until bubbly and cheese is lightly golden
  13. Remove from oven and let rest briefly before serving
