Ingredients
  

  • 6 cups about 1 loaf keto bread – cubed into bite-sized pieces
  • 6 large eggs – for custard base
  • 1 cup 240 ml unsweetened almond milk – low-carb liquid base
  • ½ cup 120 ml heavy cream – adds richness
  • ¼ cup 50 g keto sweetener (erythritol or monk fruit) – for sweetness
  • 2 tablespoons butter – melted
  • 1 teaspoon vanilla extract – for flavor
  • teaspoons ground cinnamon – classic spice
  • ¼ teaspoon nutmeg – optional warmth
  • Pinch of salt – enhances flavor
  • Optional: ½ cup berries – for topping
  • Optional: sugar-free syrup – for serving

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Grease a baking dish with butter
  3. Add cubed keto bread evenly into the dish
  4. In a bowl, whisk eggs, almond milk, heavy cream, and melted butter
  5. Add sweetener, vanilla, cinnamon, nutmeg, and salt
  6. Pour the custard mixture evenly over the bread
  7. Gently press bread down to absorb the liquid
  8. Let sit for 10–15 minutes (or refrigerate overnight for best results)
  9. Bake for 35–40 minutes until golden and set
  10. Remove and cool slightly before serving
  11. Top with berries or sugar-free syrup if desired
