Ingredients
  

  • 2 cups almond flour
  • ½ cup erythritol or preferred keto sweetener
  • ¼ cup unsweetened cocoa powder optional for chocolate version
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips optional
  • ¼ cup chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together almond flour, sweetener, cocoa powder (if using), baking soda, and salt.
  3. In a separate bowl, whisk melted coconut oil, eggs, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until a soft dough forms.
  5. Fold in chocolate chips and nuts, if using.
  6. Scoop tablespoon-sized portions of dough onto the lined baking sheet, spacing them slightly apart.
  7. Bake for 15–20 minutes, or until edges are lightly golden and the cookies feel set.
  8. Let them cool on the baking sheet for 5 minutes, then transfer to a rack to finish cooling.
  9. Enjoy once fully cooled, or store for later.

These cookies are high in healthy fats from almond flour and coconut oil, making them filling and keto-friendly.
