Ingredients
  

For the Dough
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1/4 cup powdered erythritol or monk fruit sweetener
  • 2 large eggs
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream cheese
For the Cinnamon Filling
  • 3 tablespoons butter softened
  • 3 tablespoons brown sugar keto sweetener
  • 1 tablespoon ground cinnamon
For the Glaze
  • 3 tablespoons cream cheese
  • 2 tablespoons powdered keto sweetener
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Line a baking sheet with parchment paper
Prepare the dough:
  1. In a bowl combine almond flour, coconut flour, baking powder, and sweetener
  2. Add eggs, melted butter, vanilla extract, and cream cheese
  3. Mix until a soft dough forms
Shape the rolls:
  1. Place dough between parchment sheets
  2. Roll into a rectangle shape
  3. Spread softened butter evenly across the dough
  4. Sprinkle cinnamon and keto sweetener mixture on top
Form the rolls:
  1. Carefully roll the dough into a log
  2. Slice into even cinnamon roll pieces
  3. Place rolls on the baking sheet
  4. Bake until the rolls become golden and firm.
Prepare the glaze:
  1. Mix cream cheese, sweetener, heavy cream, and vanilla until smooth
  2. Drizzle the glaze over warm cinnamon rolls before serving
