Ingredients
  

  • 6 low-carb tortillas
  • 6 large eggs
  • 8 oz breakfast sausage cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil

Method
 

  1. Preheat your oven to a moderate temperature for baking
  2. In a skillet over medium heat, cook breakfast sausage until browned and fully cooked
  3. Remove sausage from skillet and set aside on a plate
  4. In a bowl, whisk eggs with garlic powder, onion powder, paprika, salt, and pepper
  5. Pour egg mixture into the same skillet and scramble gently until fluffy
  6. Add cooked sausage and diced green onions to the eggs; mix well
  7. Warm each tortilla slightly to make them easier to roll
  8. Spoon a portion of the egg and sausage mixture along one edge of each tortilla
  9. Sprinkle shredded cheddar cheese over the filling
  10. Roll tortillas tightly around the filling to form taquitos
  11. Place each rolled taquito seam-side down on a baking sheet
  12. Lightly spray or brush with olive oil for crispiness
  13. Bake until the taquitos are golden and crisp
  14. Remove from oven and let cool slightly before serving
