Preheat a skillet or griddle over medium-high heat
In a bowl, mix ground beef with garlic powder, salt, and pepper
Divide beef into 8 equal portions and roll into balls
Press each portion onto a tortilla, spreading evenly to edges
Place tortillas meat-side down onto the hot skillet
Smash firmly with a spatula to create a thin patty
Cook for 3–4 minutes until browned and crispy
Flip and add a slice of cheese on top
Cook another 2–3 minutes until cheese melts and tortilla crisps
In a separate bowl, mix all sauce ingredients until smooth
Spread sauce over each burger
Top with shredded lettuce and pickle slices
Fold and serve immediately
