Ingredients
  

  • 4 strips bacon
  • 2 large eggs
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sliced avocado for serving
  • Optional: fresh herbs for garnish

Method
 

  1. Heat a skillet over medium heat and cook bacon strips until crispy
  2. Remove bacon and place on paper towels to drain, then chop into pieces
  3. Pour off excess bacon grease, leaving a thin layer in the pan
  4. Add olive oil to skillet and sauté bell peppers until slightly tender
  5. Stir in cherry tomatoes and spinach, cooking until softened
  6. Push veggies to one side of the skillet
  7. Crack eggs into the empty side and cook them sunny-side up or to preferred doneness
  8. Season veggies and eggs with salt and pepper to taste
  9. Transfer cooked eggs and veggies to a serving bowl
  10. Top with chopped crispy bacon
  11. Add avocado and fresh herb garnish if desired
