Ingredients
  

  • 3 large eggs
  • 2 slices bacon cooked and chopped
  • 1/2 medium avocado cubed
  • 1/4 cup 25g shredded cheddar cheese
  • 1 tbsp milk or heavy cream optional for fluffiness
  • 1 tbsp butter or olive oil
  • Salt and black pepper to taste
  • 1 tbsp fresh parsley or chives optional, for garnish

Method
 

  1. Crack eggs into a bowl, add milk or cream, salt, and pepper, then whisk until smooth
  2. Heat butter or oil in a non-stick skillet over medium heat
  3. Pour in the egg mixture and tilt the pan to spread evenly
  4. Cook gently until the edges begin to set while the center remains slightly soft
  5. Sprinkle cheese evenly over the eggs
  6. Add chopped bacon and avocado on one side of the omelette
  7. Let cook for another minute until cheese melts
  8. Carefully fold the omelette over the filling
  9. Cook for an additional 1–2 minutes until fully set
  10. Slide onto a plate and garnish with fresh herbs if desired
