Method
- Add eggs, cream cheese, almond flour, sweetener, and vanilla extract to a blender
- Blend until the batter becomes smooth and lump-free
Cook the crepes:
- Heat a nonstick skillet over medium heat
- Add a small amount of butter to the pan
- Pour a small amount of batter into the skillet
Shape the crepe:
- Tilt the pan to spread the batter into a thin circle
- Cook until the edges begin to lift from the pan
- Carefully flip the crepe and cook the other side briefly
- Repeat until all batter is used.
- Serve warm with your favorite keto toppings.
