Ingredients
  

  • 3 large eggs
  • 2 oz cream cheese softened
  • 2 tablespoons almond flour
  • 1 tablespoon powdered erythritol or monk fruit sweetener
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter for cooking
Optional toppings
  • Fresh raspberries or strawberries
  • Sugar-free powdered sweetener
  • Keto chocolate sauce
  • Whipped cream
  • Almond butter

Method
 

  1. Add eggs, cream cheese, almond flour, sweetener, and vanilla extract to a blender
  2. Blend until the batter becomes smooth and lump-free
Cook the crepes:
  1. Heat a nonstick skillet over medium heat
  2. Add a small amount of butter to the pan
  3. Pour a small amount of batter into the skillet
Shape the crepe:
  1. Tilt the pan to spread the batter into a thin circle
  2. Cook until the edges begin to lift from the pan
  3. Carefully flip the crepe and cook the other side briefly
  4. Repeat until all batter is used.
  5. Serve warm with your favorite keto toppings.
