Ingredients
  

  • 2 lbs 900 g chicken breasts or thighs
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: fresh parsley or chili flakes

Method
 

  1. Add olive oil to a mixing bowl
  2. Stir in lemon juice
  3. Add minced garlic and spices
  4. Whisk until fully combined
  5. Place chicken into a large bowl or bag
  6. Pour marinade over the chicken
  7. Toss or massage gently to coat evenly
  8. Refrigerate to allow flavors to develop
  9. Remove chicken before cooking
  10. Cook using preferred method
  11. Rest briefly before slicing
  12. Serve warm
