Ingredients
  

  • 1 cup cooked short-grain white rice
  • 2 cups whole milk
  • 2 ripe bananas
  • 3 –4 tbsp granulated sugar adjust to taste
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup whipped cream or coconut cream
  • 1 banana sliced and lightly sugared for garnish

Method
 

  1. Slice one banana and sprinkle lightly with sugar; set aside to caramelize later.
  2. Chop the remaining bananas and mash gently in a bowl until soft and pulpy.
  3. In a medium saucepan, combine cooked rice, milk, sugar, vanilla extract, and salt over medium heat.
  4. Stir constantly until the mixture becomes steamy and begins to thicken slightly.
  5. Fold in the mashed bananas and continue stirring until well mixed and heated through.
  6. Remove pudding from heat and let cool a few minutes.
  7. Stir in the whipped cream or coconut cream until smooth and creamy.
  8. In a small skillet over medium heat, cook the sugared banana slices until lightly caramelized and golden.
  9. Spoon the pudding into serving bowls, topping each with caramelized banana slices.
