Ingredients
  

  • 12 oz pasta penne, rotini, or shells
  • 12 oz smoked sausage or Italian sausage sliced
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
Optional additions
  • 1/2 cup heavy cream for creamy pasta
  • 1/2 cup sautéed mushrooms
  • 1 cup baby spinach

Method
 

  1. Bring a large pot of salted water to a boil
  2. Cook pasta according to package instructions until al dente
  3. Drain pasta and reserve a little pasta water
Prepare the sausage:
  1. Heat a large skillet over medium heat
  2. Add sliced sausage and cook until browned on both sides
  3. Remove sausage and set aside
Make the garlic butter sauce:
  1. In the same skillet melt butter
  2. Add minced garlic and cook until fragrant
  3. Stir in salt, black pepper, Italian seasoning, and red pepper flakes
Combine everything:
  1. Add cooked pasta to the skillet
  2. Return browned sausage to the pan
  3. Toss everything together until coated in garlic butter
  4. Add parmesan cheese and mix well
  5. Add a splash of reserved pasta water if needed for sauce consistency
  6. Garnish with chopped parsley and serve warm.
