Ingredients
  

  • Bread slices – 2
  • Hummus – ½ cup
  • Hard-boiled eggs – 2
  • Sun-dried tomatoes chopped – ¼ cup
  • Fresh chives chopped – 1–2 tablespoons
  • Salt – to taste
  • Black pepper – to taste

Method
 

  1. Toast the bread until golden and crisp.
  2. Spread hummus evenly over each slice.
  3. Slice or roughly chop the hard-boiled eggs.
  4. Place the eggs on top of the hummus layer.
  5. Sprinkle with chopped sun-dried tomatoes.
  6. Finish with chives, salt, and black pepper.
  7. Serve immediately while the toast is warm and crunchy.
