Preheat oven to 400°F (200°C)
Toss cubed sweet potatoes with olive oil, salt, and pepper
Spread on a baking tray and roast for 25–30 minutes until golden
Heat a skillet over medium-high heat and cook ground beef until browned
Add taco seasoning and tomato paste, stirring until well combined
Cook for another 2–3 minutes until flavorful and slightly caramelized
Remove from heat and set aside
Assemble bowls by adding roasted sweet potatoes first
Add cooked ground beef on top
Spoon cottage cheese and add sliced avocado
Drizzle generously with hot honey
Garnish with chili flakes or green onions if desired
