Ingredients
  

  • 1 lb 450 g lean ground beef – main protein source
  • 2 medium sweet potatoes about 500 g – peeled and cubed
  • 1 tablespoon olive oil – for roasting
  • 1 tablespoon taco seasoning – adds flavor to beef
  • 1 tablespoon tomato paste – optional for richness
  • cups 300 g cottage cheese – high-protein topping
  • 1 large avocado – sliced for creaminess
  • 2 tablespoons hot honey – sweet and spicy drizzle
  • ½ teaspoon salt – to taste
  • ½ teaspoon black pepper – freshly ground
  • Optional: chili flakes or green onions – for garnish

Method
 

  1. Preheat oven to 400°F (200°C)
  2. Toss cubed sweet potatoes with olive oil, salt, and pepper
  3. Spread on a baking tray and roast for 25–30 minutes until golden
  4. Heat a skillet over medium-high heat and cook ground beef until browned
  5. Add taco seasoning and tomato paste, stirring until well combined
  6. Cook for another 2–3 minutes until flavorful and slightly caramelized
  7. Remove from heat and set aside
  8. Assemble bowls by adding roasted sweet potatoes first
  9. Add cooked ground beef on top
  10. Spoon cottage cheese and add sliced avocado
  11. Drizzle generously with hot honey
  12. Garnish with chili flakes or green onions if desired
