Ingredients
  

  • 2 cups 300 g cooked white or brown rice – warm and fluffy
  • 1 lb 450 g boneless, skinless chicken breast – cut into strips or cubes
  • 2 tablespoons honey – for natural sweetness
  • 2 tablespoons fresh lime juice – adds brightness
  • 1 teaspoon lime zest – enhances citrus flavor
  • 1 tablespoon olive oil – for cooking
  • 2 cloves garlic – minced for depth
  • ½ teaspoon salt – adjust to taste
  • ½ teaspoon black pepper – freshly ground
  • 1 ripe avocado – mashed for creaminess
  • 1 tablespoon lime juice for avocado – prevents browning
  • 2 tablespoons fresh cilantro – chopped for freshness
  • ¼ cup diced red onion – optional topping for crunch
  • ¼ cup diced tomatoes – optional for freshness

Method
 

  1. In a bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, salt, and pepper
  2. Add chicken pieces and toss well to coat, letting them marinate for at least 15–30 minutes
  3. Heat a skillet over medium-high heat and cook the chicken until golden and fully cooked through
  4. Remove chicken and let it rest briefly before slicing or keeping in chunks
  5. In a separate bowl, mash avocado with lime juice, salt, and pepper until creamy but slightly chunky
  6. Mix cooked rice with chopped cilantro and a squeeze of lime juice for added flavor
  7. Place a ring mold or small bowl on a plate and layer rice first, pressing gently
  8. Add a layer of avocado mixture on top of the rice
  9. Finish with a generous portion of honey lime chicken
  10. Carefully lift the mold to create a stacked presentation
  11. Garnish with red onion, tomatoes, extra cilantro, or lime wedges
