- Pat the salmon cubes dry with paper towels to remove excess moisture
- Place the salmon in a large bowl and drizzle with olive oil
- Season with sea salt, black pepper, smoked paprika, and garlic powder
- Toss gently until all pieces are evenly coated
- Preheat the air fryer to 200°C (400°F) for 3 minutes
- Arrange the salmon bites in a single layer in the air fryer basket, leaving space between pieces
- Air fry for 7–9 minutes, shaking the basket halfway through, until the salmon is cooked through and lightly crisp on the edges
- While the salmon cooks, combine honey, soy sauce, minced garlic, lemon juice (or rice vinegar), cornstarch, and water in a small saucepan
- Cook the sauce over medium heat, stirring constantly, until thickened and glossy
- Remove the sauce from heat once it reaches a syrupy consistency
- Transfer the cooked salmon bites to a bowl and pour the warm honey garlic sauce over them
- Toss gently to coat every piece evenly
- Garnish with chopped green onions or sesame seeds if desired
- Serve immediately while warm and sticky
