Grease a mini muffin pan or silicone muffin mold
In a large bowl whisk together eggs, milk, maple syrup, vanilla extract, and melted butter
Add pancake mix, baking powder, and salt to the mixture
Stir until the batter becomes smooth and combined
Fold in cooked sausage crumbles and shredded cheddar cheese
Spoon the batter evenly into the muffin cups
Fill each cup about three-quarters full
Bake until the tops become golden and the bites are fully set
Allow them to cool slightly before removing from the pan
Serve warm or store for meal prep
