Ingredients
  

  • 1 cup pancake mix
  • 2 large eggs
  • 1/2 cup milk 120 ml
  • 1/2 cup cooked breakfast sausage crumbled
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon melted butter

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Grease a mini muffin pan or silicone muffin mold
  3. In a large bowl whisk together eggs, milk, maple syrup, vanilla extract, and melted butter
  4. Add pancake mix, baking powder, and salt to the mixture
  5. Stir until the batter becomes smooth and combined
  6. Fold in cooked sausage crumbles and shredded cheddar cheese
  7. Spoon the batter evenly into the muffin cups
  8. Fill each cup about three-quarters full
  9. Bake until the tops become golden and the bites are fully set
  10. Allow them to cool slightly before removing from the pan
  11. Serve warm or store for meal prep
