Slice the oranges into even 1/4-inch thick rounds.
Combine the sugar and water in a saucepan and heat over medium heat until the sugar dissolves and the mixture begins to simmer.
Add the orange slices in a single layer and reduce the heat to low.
Simmer gently for 45–60 minutes, turning occasionally, until the peels become translucent and tender.
Carefully remove the slices and place them in a single layer on a wire rack.
Let the slices dry uncovered at room temperature for 24–48 hours until tacky and set.
Once dried, enjoy as-is or roll lightly in extra sugar if desired.
