Ingredients
  

  • 1 lb ground turkey
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 2 medium zucchini spiralized
  • Fresh parsley chopped (optional)

Method
 

  1. In a bowl, combine ground turkey, egg, Parmesan, garlic powder, onion powder, salt, and pepper.
  2. Mix gently and form into small meatballs.
  3. Heat olive oil in a large pot over medium heat.
  4. Add diced onion and cook until softened.
  5. Stir in minced garlic and cook briefly until fragrant.
  6. Pour in chicken broth and add Italian seasoning.
  7. Gently add meatballs to the simmering broth.
  8. Cook for 10–12 minutes until meatballs are fully cooked.
  9. Add zucchini noodles and simmer for 2–3 minutes until just tender.
  10. Taste and adjust seasoning before serving.
