Ingredients
  

  • 2 cups cooked shredded chicken breast
  • ½ cup canned black beans rinsed and drained
  • ½ cup sweet corn fresh, canned, or frozen
  • ½ cup diced red bell pepper
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: avocado slices jalapeños, extra lime wedges

Method
 

  1. Add shredded chicken to a large mixing bowl
  2. Add black beans, corn, diced bell pepper, and red onion
  3. Sprinkle chopped cilantro over the mixture
  4. In a separate bowl, combine Greek yogurt, mayonnaise, lime juice, and spices
  5. Mix dressing until smooth and well combined
  6. Pour dressing over the chicken mixture
  7. Toss everything together until evenly coated
  8. Taste and adjust seasoning if needed
  9. Chill in the refrigerator for 15–20 minutes for best flavor
  10. Serve fresh with optional toppings like avocado or jalapeños
