Ingredients
  

  • 1 lb ground chicken
  • 1 cup shredded parmesan cheese
  • ½ cup breadcrumbs
  • 2 cloves garlic minced
  • 1 large egg
  • ¼ cup milk
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons melted butter
  • 2 tablespoons grated parmesan for topping
  • Fresh parsley chopped (optional garnish)

Method
 

  1. Preheat oven to 375°F and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine ground chicken, shredded parmesan, breadcrumbs, garlic, egg, milk, Italian seasoning, salt, pepper, and olive oil.
  3. Mix gently until just combined; avoid overmixing.
  4. Divide the mixture into equal portions and shape into mini meatloaves.
  5. Arrange meatloaves on the prepared baking sheet.
  6. Bake for 25–30 minutes, until cooked through.
  7. Brush the tops with melted butter and sprinkle with grated parmesan.
  8. Return to oven for 5 more minutes until lightly golden.
  9. Garnish with fresh parsley before serving if desired.
