Preheat your oven to 375°F and line a baking sheet with parchment paper or a silicone baking mat.
In a bowl, combine the cottage cheese, grated Parmesan, egg, garlic powder, onion powder, salt, and any optional seasonings. Stir until the mixture is evenly blended.
Use a spoon or small cookie scoop to drop rounded teaspoon-sized mounds of mixture onto the prepared baking sheet, spacing them about 1 inch apart.
Gently flatten each mound with the back of the spoon so they are thin and even.
Bake for about 12–15 minutes, or until the edges are golden and the chips are crisp.
Allow the chips to cool completely on the baking sheet — they will continue to crisp up as they cool.
Serve once cool, or store for later snacking.
