Ingredients
  

  • Cottage cheese – 2 cups
  • Eggs – 4 large
  • Blueberries – 1½ cups
  • Oat flour – ½ cup
  • Honey or maple syrup – ¼ cup
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Cinnamon – ½ teaspoon
  • Salt – ¼ teaspoon
  • Butter or oil – for greasing the dish

Method
 

  1. Preheat the oven to 350°F and lightly grease a baking dish.
  2. In a mixing bowl, whisk together the cottage cheese and eggs until mostly smooth.
  3. Add honey or maple syrup, vanilla extract, cinnamon, and salt, mixing until combined.
  4. Stir in the oat flour and baking powder until no dry spots remain.
  5. Gently fold in the blueberries, taking care not to crush them.
  6. Pour the mixture evenly into the prepared baking dish.
  7. Bake for 35–40 minutes, until the center is set and the top is lightly golden.
  8. Let the bake rest for 10 minutes before slicing and serving.
