Method
- Blend rolled oats in a blender until a fine flour forms
- In a large bowl, combine oat flour and baking powder
- Add milk and mix until a smooth batter forms
- Stir in grated carrot and chopped apple
- Add chopped apricots and raisins, mixing evenly
- Let the batter rest for 5–10 minutes to thicken
- Pour batter into a greased or lined baking pan
- Spread evenly using a spatula
- Bake in a preheated oven until set and lightly golden
- Remove from oven and allow to cool before slicing
